Emilio’s Restaurant - Bar Set Up & Menu Development

At a time when Darby Street was just beginning to emerge as a destination for food and community, Emilio and Barbara Falcon opened a small Italian restaurant built on simple values: honest cooking, warm hospitality, and a genuine sense of connection.

Together with their three children Angelina, Carlo, and Caterina—they created a space where guests were welcomed like family. The kitchen reflected their home: fresh, seasonal ingredients, daily deliveries carefully selected by hand, and recipes passed down through memory rather than written form. Homemade pasta and traditional pizzas quickly became signatures of the restaurant, earning Emilio’s a reputation for food that felt deeply personal—comforting, generous, and authentic.

Project Overview

As Emilio’s expanded into its newer locations in Warners Bay and The Junction, the team introduced a dedicated cocktail bar—marking a natural evolution of the brand while maintaining its strong identity rooted in tradition and community. I was brought in to develop and implement a complete cocktail program that would integrate seamlessly into the existing offering, enhancing the guest experience without compromising the venue’s operational flow. The challenge was to introduce a modern, high-quality beverage component within a well-established restaurant environment—ensuring that the bar felt like a natural extension of Emilio’s rather than a departure from it.
