The Gaijin Project is a nomadic culinary concept crafting immersive dining experiences in unique spaces around the world a 12-seat, 12-course modern Japanese omakase restaurant, paired with refined cocktails, with a Japanese influence. Operating one night a week with two sittings per evening, the project blends exclusivity, innovation, and respect for tradition.

Deliverables – Omakase Series Residency

  • Project management and coordination across departments

  • Timeline creation and execution of opening schedule

  • Beverage concept development and full drinks menu creation

  • Supplier sourcing and ordering (beverage + operational items)

  • Costing, budgeting, and stock control

  • FOH workflow design and mise en place systems

  • Staff recruitment support and training coordination

  • Service standards development and documentation

  • Onsite setup and operational readiness checks

  • Liaison between creative, culinary, and venue teams

  • Support during launch and ongoing operational refinement
