About Dany Karam:
Dany Karam is one of Sydney’s most respected culinary talents, previously Executive Chef of The Star Sydney. As Culinary Ambassador for the Cabravale Diggers redevelopment, he leads the creation of two signature venues—a world-class steakhouse and a 300-seat Italian restaurant—bringing fine dining to Western Sydney on a new scale.
What I Delivered as Beverage Consultant:
Creative collaboration with Chef Dany Karam
Design of a 360-degree flat bar optimised for service flow and guest interaction
Curation of a 300-bottle spirit library, focused on premium whiskies, agave, and global classics
Advanced cocktail program utilising Rotovap and centrifuge techniques
Creation of lab-style prep workflows for flavour clarity and consistency
Bar team recruitment across FOH and cocktail stations
Full OSE (Operating Supplies & Equipment) procurement, including back bar setup and prep tools
Cocktail and whisky service training, including tastings, technical modules, and live drills
Bar launch execution: setup, pre-opening service runs, on-site team training
Ongoing operational support, including troubleshooting, supplier coordination, and system refinement
