Novotel Cabramatta – Hotel Beverage Consulting for Cabravale Diggers
Novotel Cabramatta marks a major redevelopment led by Cabravale Diggers to transform Western Sydney’s hospitality landscape. As part of a multi-stage $50 million project, the venue will feature a 4-star Novotel hotel, a premium steakhouse and whisky bar by renowned chef Dany Karam, a 300-seat Italian restaurant, and multiple bars and event spaces. As beverage consultant, I led the development of five distinct bar programs and one restaurant concept, delivering full beverage strategy from concept to implementation.
About Cabravale Diggers:
Cabravale Diggers is a cornerstone community club in South West Sydney, now evolving into a major hospitality destination. In partnership with Accor, they are launching Novotel Cabramatta a landmark precinct combining luxury accommodation, premium dining, entertainment, and curated bar experiences.
What I Delivered as Consultant:
Beverage concept and menu development for 10 bars and a fine dining restaurant
Full spirits, wine, beer, and non-alcoholic portfolio curation
OSE (Operating Supplies & Equipment) planning and procurement
Cocktail and wine list development with recipe costing and POS integration
Staff recruitment for all bar teams across the hotel and dining venues
Staff training more then 70 staff
Operational support for venue launch, including bar setups, staff training on-site, and pre-opening service coordination
Design and implementation of a custom bartender training and bar school
75-page training manual with structured modules, quizzes, blind tastings, and service role plays
Team onboarding, live training sessions, and a graduation-based certification process
