Emilio’s is a family-owned Italian restaurant with a long-standing reputation for warm hospitality and traditional, ingredient-driven cooking. As the brand expanded into new locations in Warners Bay and The Junction, a dedicated cocktail bar was introduced to complement the existing dining experience. I was engaged to develop and implement a cocktail program that integrated seamlessly into the restaurant, enhancing the offering while maintaining operational efficiency and the venue’s strong identity.

Scope & Deliverables

  • Development of a cocktail menu (10 signatures) aligned with the Italian-inspired concept and seasonal approach

  • Bar setup and equipment procurement to support efficient service within the new space

  • Costing and pricing strategy to ensure strong margins and consistency

  • Implementation of batching and prep systems to streamline service and reduce pressure during peak periods

  • Staff training focused on execution, workflow, and maintaining quality under volume

  • Operational integration to ensure the bar functioned seamlessly alongside the restaurant’s service
