Emilio’s is a family-owned Italian restaurant with a long-standing reputation for warm hospitality and traditional, ingredient-driven cooking. As the brand expanded into new locations in Warners Bay and The Junction, a dedicated cocktail bar was introduced to complement the existing dining experience. I was engaged to develop and implement a cocktail program that integrated seamlessly into the restaurant, enhancing the offering while maintaining operational efficiency and the venue’s strong identity.
Scope & Deliverables
Development of a cocktail menu (10 signatures) aligned with the Italian-inspired concept and seasonal approach
Bar setup and equipment procurement to support efficient service within the new space
Costing and pricing strategy to ensure strong margins and consistency
Implementation of batching and prep systems to streamline service and reduce pressure during peak periods
